Why hire
A show runs for a night, a week, a season. Then it's gone. Buying a system to cover that means owning something idle eleven months of the year, ageing whether it works or not, and costing you storage and insurance the whole time. Hiring puts the cost where the show is.
Hiring converts that into a cost attached to the production that incurs it. It also means the specification can follow the room rather than the store cupboard: a system that suited last year’s venue may be entirely wrong for this year’s, and hiring lets the right answer be used rather than the owned one.
The trade exists because of those two facts, and everything about how it operates (the preparation, the documentation, the way kit is packed and returned) follows from equipment being used hard by many hands and having to work perfectly on a date that can't move.

These aren't independent. What can be flown determines where loudspeakers can go, which determines the coverage achievable, which determines what system is appropriate. Deciding one without the others is the commonest way a specification goes wrong.
The constraint nobody mentions
Three practical limits shape every specification more than preference does. Power: a venue has a finite supply, of a particular type, in a particular place, and a system that exceeds it can't be used regardless of how good it's. Weight: rigging points have rated capacities, and those ratings are absolute. Time: the get-in and get-out windows are fixed, and a system that can't be rigged and struck within them is the wrong system whatever it sounds like.
A good specification is the best answer within those three, not the best answer in the abstract.
